
Passionfruit Marshmallow Sundae

Ingredients
- 120 g Malt-o-milk biscuits, roughly chopped
- 8 large scoops vanilla ice-cream
- 8 tbsp fresh or canned passionfruit pulp
- 8 All Aussie Sweet Treats 'Passionfruit Marshmallows'
Method
Preheat the grill to high and place the grill shelf around 15-20 cm from the heating element.
Place crumbled biscuits in the base of 4 wide glasses or sundae bowls.
Place 2 generous scoops of ice cream onto each crumb base. Drizzle passionfruit pulp all over the ice cream.
Place glasses in the freezer while preparing the marshmallows.
Line a shallow baking tray with baking paper. Please ensure that any overhanging baking paper is trimmed so it doesn't catch fire.
Place 4 marshmallows onto the tray with a 5 cm space around each one.
Put the tray under the grill for 1 ½ to 2 minutes until the tops of the marshmallows become lightly browned. Remove the tray from the oven once the marshmallows have slightly expanded and are starting to droop, but before they start to ooze out.
Take the glasses out of the freezer. Use an offset spatula to lift off the marshmallows, placing one on top of each sundae.
