
Chocolate Rice Bubble Marshmallow Bites

Makes 16 pieces.
Ingredients
- 85 g Salted Butter, diced
- 25 g Cocoa Powder
- 180 g Rice Bubbles
- 150 g All Aussie Sweet Treats 'Fairy Floss Marshmallows'
- 60 g White Chocolate Chips
- *optional sprinkles, but they do look like so much fun!
Method
Line a 20 cm x 20 cm x 5 cm baking tray with baking paper.
Cut each marshmallow into 12 equal pieces; this is easily done with kitchen scissors.
In a large saucepan, melt the butter on a low heat; do not let it start to bubble. Once melted, stir in the cocoa powder until it has fully dissolved. Add the chopped marshmallows and chocolate chips, heating and stirring on a low heat for about a minute until the marshmallows just start to melt.
Remove the saucepan from the heat and gently stir in the rice bubbles, adding around a cup at a time. Gently combine well.
Scrape the mixture into the lined baking tray. Use a silicone spatula to gently compress the mixture in the baking tray without breaking the rice bubbles.
Add sprinkles on top if you like, and use the spatula to press them down so they stick.
Leave the tray on the bench for about an hour so the mixture can set before cutting it into pieces.
